Making this recipe takes less than 10 minutes. Most of that time is used to slice the onion.

The onions then need to sit in the brine for 30 minutes before serving.

Can This Recipe Be Made Ahead Of Time?

Yes. We almost always have a jar of these onions in our fridge. They will last in the fridge for up to one month.

And, this recipe is a great way to use onions that may otherwise go bad. When we buy red onions, if we don’t use the whole onion, instead of putting the remainder in the fridge to possibly go to waste, we slice it and add it to the jar we have on hand. That way the leftover onion isn’t going to waste.

Ingredients

  • 1 red onion, thinly sliced
  • ¾ cup apple cider vinegar
  • ¼ cup water
  • 1 tsp sea salt
  • 1 Tbsp white sugar

Instructions

  • In a saucepan, add vinegar, water, sugar and salt.
  • Whisk over medium heat until just boiling, remove from heat.
  • Place sliced onion in a mason jar.
  • Pour liquid over the onion slices.
  • Put lid on jar and turn upside down a couple of times to cover the onions with the liquid.
  • Let sit for 30 minutes before serving.
  • Store leftovers in the fridge.
