Bacon and fresh blueberries are the stars in this Smoked Bacon Crumble Blueberry Pie. This blueberry pie is the perfect dessert to serve at a summer BBQ, especially in July when blueberries are at their peak.

This pie is smoked on the pellet smoker and the bacon crumble adds a new level of flavour to the sweet blueberry filling. This is a dessert we like to take to a potluck in the summer.

Ingredients For Smoked Bacon Crumble Blueberry Pie
There are two parts to this recipe. The filling and the crumble top.
- Pie crust. This can be frozen or homemade. We usually use a frozen pie crust because it is less work.
The Filling:
- Fresh blueberries. We always make this recipe with fresh blueberries and have never tried using frozen. There is something about fresh blueberries that tastes better, especially when in season.
- Lemon juice and zest. This helps bring out the flavours of the blueberries.
- Flour. This helps thicken the filling.
- Cornstarch. Another ingredient to help thicken the filling.
- White sugar. Adding sugar helps to create the filling and adds a little more sweetness since some blueberries could be tart.
- Cinnamon. Adds just a little spice to the pie filling.
The Bacon Crumble:
- Crisp cooked bacon. The saltiness and crispiness of the bacon add a nice touch to the crumble of the pie.
- Rolled oats. Quick-cooking oats work best.
- All-purpose flour.
- Brown sugar.
- Cinnamon.
- Butter. Salted or unsalted can be used.

What Smoke Is Used For Blueberry Pie?
When it comes to the smoke for this pie, we use apple wood pellets. Other fruit blends of pellets also work well. We have also used competition blends pellets and they have worked well.
Does The Pie Crust Need To Be Pre-baked?
For this recipe, the pie crust does not need to be pre-baked. The pie is baked at a high temperature to start and that is enough to cook the bottom crust.
How To Keep The Bottom Crust From Getting Soggy?
There is nothing more disappointing when you bite into a piece of pie than a soggy bottom crust.
To prevent the crust from becoming soggy, place a baking pan or cookie sheet on the smoker or in the oven while it is preheating. Then when the pie is placed on the pan to bake, the heat from the metal pan will help bake the bottom crust quickly before it has a chance to get soggy.
Can This Pie Be Baked In The Oven?
Yes, it can be baked in the oven, but it will be missing the smoky flavour you get from the smoker. If you don’t have a pellet smoker, then the pie can be baked in the oven or even on a BBQ.
Preheat the oven the same way you would the smoker and bake the pie following the same instructions.
If using the BBQ to bake this blueberry pie, use offset heat. Smoking chips can also be used in the BBQ to add a smoky flavour.
Serving Smoked Bacon Crumble Blueberry Pie
To serve this pie, you can serve it warm or cold. It’s a matter of preference. It is great on its own either way.
We like to serve it warm or room temperature with a scoop of vanilla ice cream.
Storing Smoked Bacon Crumble Blueberry Pie
Any leftover blueberry pie should be covered and refrigerated for up to 3 days.
We like to keep the pie in an air-tight pie container. These types of containers are also a great way to transport the pie when taking it to a BBQ party or potluck.

Smoked Bacon Crumble Blueberry Pie
Ingredients
- 1 pie crust
Filling
- 6 cups fresh blueberries
- ½ cup sugar
- 2 Tbsp lemon juice
- 1 Tbsp lemon zest
- ¼ cup all-purpose flour
- 2 Tbsp cornstarch
- ¼ tsp cinnamon
Crumble Top
- 4 slices crisp cooked bacon, crumbled
- 1½ cups rolled oats, quick cooking
- ½ cup flour
- ¾ cup brown sugar
- ¼ tsp cinnamon
- ½ cup butter, softened
Instructions
Filling
- In a large bowl, mix all the filling ingredients together until well mixed and not dry.
- Set aside.
Crumble Top
- Place all ingredients in a bowl and mix together with a spoon.
- Using your hands, mix the ingredients well until it becomes crumblike.
Assembling the pie
- Preheat the smoker to 400℉ using smoking pellets of your choice.
- Place a cookie sheet on the smoker to preheat it.
- Fill the pie crust with blueberry filling.
- Sprinkle the crumble evenly over the top of the filling.
- When the smoker is at temperature, place the pie on the preheated cookie sheet.
- Allow to bake for 15 minutes.
- Lower the temperature to 350℉ and continue to bake for additional 30 minutes.
- Rotate the pie after 15 minutes for best results.
- Remove from smoker when crust is golden and the topping is browned.
- Allow to cool at least 30 minutes before slices.
- Serve warm or at room temperature.
