There are two parts to this meatloaf: the meatloaf itself and the glaze.
Meatloaf:

Besides the usual mashed potatoes, serve this meatloaf with any of these side dishes:

Treat the smoker like the oven and preheat it to 350ºF using a competition blend or a mild wood alike applewood. The smoke will add another level of flavour to the meatloaf.
Smoke the meatloaf until it is cooked through and the internal temperature reaches 165ºF. You can use a leave in or an instant read thermometer to check the temperature.
Allow the meatloaf to rest for 10-15 minutes before slicing.
What To Do With Leftover Meatloaf
Any leftover meatloaf should be wrapped and kept in the fridge. It will last up to three days in the fridge.
Meatloaf can also be frozen for up to three months. Thaw in the fridge overnight before reheating.

Glazed Asian-Inspired Pork Meatloaf
Ingredients
Meatloaf
- 2 pounds lean ground pork
- 2 eggs
- ½ cup bread crumbs
- 1 small onion, minced
- 2 cloves garlic, minced
- ¼ cup soy sauce
- 1 Tbsp fish sauce
Glaze
- ¼ cup ketchup
- ¼ cup Gochujang paste
- 2 Tbsp honey
- 1 Tbsp brown sugar
- ¼ cup soy sauce
- 2 tsp garlic powder
- 1 Tbsp sesame oil
- 1 Tbsp rice vinegar
Instructions
- Preheat oven to 350℉.
- In a large bowl, combine all the ingredients for the meatloaf, mixing by hand until combined.
- Press meat into a 9 inch loaf pan.
- Bake for 45 minutes, or until the centre of the meatloaf reaches 160℉.
Glaze
- Combine all ingredients in a bowl.
- Whisk to mix well.
- Brush glaze on cooked meatloaf.
- Return the meatloaf to the oven and bake for additional 10 minutes or until meatloaf reaches 165℉.
- Let rest in pan for 10 minutes before removing from the pan.
- Slice and serve.
