Carrot oatmeal muffins have quickly become our family’s favourite snack. They are perfect to pair with a cup of coffee or tea to start your day or as a pick-me-up mid-morning.

Ingredients

  • 1 cup quick cooking oats
  • 1 cup milk
  • ¼ cup brown sugar
  • ¼ cup white sugar
  • 1 egg
  • ¼ cup vegetable oil
  • 1 cup all-purpose flour
  • 1 Tbsp baking powder
  • 1 tsp cinnamon
  • ½ tsp baking powder
  • ¾ cup shredded carrots

Instructions

  • In a large bowl, mix together oats and milk. Set aside for 10 minutes.
  • Preheat oven to 375℉ and line a muffin pan with muffin papers or grease.
  • Add sugars, egg and oil to the oats and stir to combine.
  • Stir in flour, baking powder, cinnamon, and baking soda, stirring until just combined.
  • Fold in carrots/
  • Fill muffin pan evenly with batter.
  • Bake for 18-22 minutes or until muffins are baked through.
  • Cool in pan for 2 minutes before transferring to a cooling rack to cool completely.
  • Store in an air-tight container.
