Why Add Bourbon to Banana Cookies?
Adding a little bourbon to any recipe that has bananas helps to bring out the banana flavour. It also helps keep the cookies moist.
The bourbon in this recipe is optional and can be omitted and replaced with milk.
Another option is to replace the bourbon with Brandy.
Why Use Over-ripe Bananas?
When bananas start to turn black, they get sweeter. The darker the banana, the sweeter it becomes.
Overripe bananas also break down more easily and act as a liquid in the cookie dough, adding moisture.
