Banana Chocolate Chip Cookies

- ½ cup vegetable oil
- 1 cup brown sugar
- 1 egg
- 1 tsp vanilla extract
- 2 Tbsp bourbon, or milk
- 1 small banana, mashed, about ¼ cup
- 2 Tbsp cinnamon
- ½ tsp nutmeg
- ½ tsp baking soda
- ½ tsp sea salt
- 1¾ cups all-purpose flour
- ¾ cups chocolate chips
Preheat oven to 350℉ and line a cookie pan with parchment paper.
In a large bowl, beat together vegetable oil and brown sugar.
Beat in egg, vanilla, bourbon, and banana, until smooth
Stir in cinnamon, nutmeg, baking soda, and salt.
Add flour and stir until just combined.
Fold in chocolate chips.
Drop cookie dough by spoonfuls onto prepared pan.
Bake for 12-15 minutes or until cookies are browned on the edge and centers are still slightly wet.
Cool on the pan for 2-3 minues, then transfer to cooling rack.
Store cooled cookies in an air-tight container for up to 5 days.
