- 4 potatoes, medium to large size
- ¼ cup extra-virgin olive oil
- 1 tsp dried basil
- 1 tsp dried oregano
- 1 tsp garlic powder
- 1 tsp onion powder

- ½ tsp dried thyme
- 1 tsp sea salt

Garlic Sauce
- 1 cup mayonnaise
- 2 Tbsp garlic puree
- 1 Tbsp lemon juice
- ½ tsp salt
- ¼ tsp pepper
Instructions
Roasted Potatoes
- Cube potatoes into ½-inch cubes and soak in cold water for 30 minutes.
- Preheat oven to 400℉
- Drain potatoes and pat dry.
- Place potatoes in a large bowl and coat with the olive oil.
- In a small bowl, mix all the herbs and spices together.
- Sprinkle herb and spice mix over potatoes and stir to coat.
- Spread potato cubes onto a large baking pan in a single layer.
- Bake for 25-35 minutes or until potatoes are tender and cooked through, stirring every 10 minutes.
- Serve potatoes with garlic sauce.
