Roasted Potatoes with Garlic Sauce

Ingredients

Roasted potatoes

  • 4 potatoes, medium to large size
  • ¼ cup extra-virgin olive oil
  • 1 tsp dried basil
  • 1 tsp dried oregano
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried rosemary
  • ½ tsp ground sage
  • ½ tsp dried thyme
  • 1 tsp sea salt
  • 1 tsp coarse black pepper

Garlic Sauce

  • 1 cup mayonnaise
  • 2 Tbsp garlic puree
  • 1 Tbsp lemon juice
  • ½ tsp salt
  • ¼ tsp pepper

Instructions

Roasted Potatoes

  • Cube potatoes into ½-inch cubes and soak in cold water for 30 minutes.
  • Preheat oven to 400℉
  • Drain potatoes and pat dry.
  • Place potatoes in a large bowl and coat with the olive oil.
  • In a small bowl, mix all the herbs and spices together.
  • Sprinkle herb and spice mix over potatoes and stir to coat.
  • Spread potato cubes onto a large baking pan in a single layer.
  • Bake for 25-35 minutes or until potatoes are tender and cooked through, stirring every 10 minutes.
  • Serve potatoes with garlic sauce.

  • Combine all ingredients in a bowl and stir well.
