Parmesan Melting Potatoes

This potato side dish is full of flavour, and so easy to make. We even make these as a snack because they are so good!

Ingredients For Parmesan Melting Potatoes

This recipe is made with simple ingredients.

  • Potatoes. We use Russets.
  • Extra Virgin Olive Oil.
  • Butter.
  • Beef Broth.
  • Fresh Rosemary.
  • Salt and Pepper.
  • Parmesan.

Substitutions For This Recipe

The potatoes we use are Russets but red potatoes are also a good choice. Yukon gold can also be used.

We use salted butter in this recipe, but unsalted can be used. Since we don’t use margarine at all, we have not tested this recipe using it, but it could work, the flavour would be different though.

Beef broth gives a lot of flavour to the potatoes and it compliments the parmesan. If you prefer chicken broth can be used in its place.

Roasting The Potatoes

There are three methods we have tested for this recipe. Oven, BBQ, and Blackstone. All have provided great results. The recipe below uses the oven to roast the potatoes.

To make these on the BBQ, heat the BBQ and use it like an oven. We have found that the BBQ will roast the potatoes faster than the oven in most cases. We cut the cooking times by 5 minutes per side and an additional 5 minutes is cut at the end of the cooking process. On the BBQ, the potatoes are done in 30 minutes instead of 45.

On the Blackstone, we place the potatoes directly on the preheated griddle and use a dome to cover them while they cook. Then we flip after 5 minutes. Cook the second side for 5 minutes. And the final stage takes another 5-7 minutes covered.

How To Serve Parmesan Melting Potatoes

Serve melting potatoes after cooling for a few minutes. These are best served while they are hot.

A dip on the side is a good way to eat these. We like sour cream, Ranch, and dill pickle sauce.

What To Do With Leftovers

Keep leftovers in an air-tight container in the fridge for up to 2 days. Reheat them in the oven or an air fryer.

Parmesan Melting Potatoes

Ingredients

  • 3 pounds russet potatoes
  • 3 Tbsp extra-virgin olive oil
  • ¼ cup butter, melted
  • 1 tsp coarse sea salt
  • ½ tsp black pepper
  • 2-3 fresh rosemary sprigs
  • ¼ cup beef broth
  • ¼-½ cup grated parmesan

Instructions

  • Preheat oven to 450℉
  • Peel potatoes and cut them into ¼ inch rounds.
  • Toss cut potatoes with olive oil, butter, salt and pepper.
  • Place in a single layer on a large baking pan with raised edges.
  • Remove rosemary leaves from stems and sprinkle over the potatoes.
  • Bake for 15 minutes.
  • Flip potatoes over and bake additional 15 minutes.
  • Pour beef broth over the potatoes.
  • Return to oven and bake for 15 minutes.
  • Remove from oven and immediately sprinkle grated parmesan over the potatoes.
  • Serve immediately.
