Parmesan Melting Potatoes

Oven-roasted Parmesan Melting Potatoes are crispy on the outside and tender in the center. These roasted potatoes make a great side dish for just about any meal.

Ingredients

  • 3 pounds russet potatoes
  • 3 Tbsp extra-virgin olive oil
  • ¼ cup butter, melted
  • 1 tsp coarse sea salt
  • ½ tsp black pepper
  • 2-3 fresh rosemary sprigs
  • ¼ cup beef broth
  • ¼-½ cup grated parmesan

Instructions

  • Preheat oven to 450℉
  • Peel potatoes and cut them into ¼ inch rounds.
  • Toss cut potatoes with olive oil, butter, salt and pepper.
  • Place in a single layer on a large baking pan with raised edges.
  • Remove rosemary leaves from stems and sprinkle over the potatoes.
  • Bake for 15 minutes.
  • Flip potatoes over and bake additional 15 minutes.
  • Pour beef broth over the potatoes.
  • Return to oven and bake for 15 minutes.
  • Remove from oven and immediately sprinkle grated parmesan over the potatoes.
  • Serve immediately.
