Turkey burgers were never top of our list of burgers because they were usually dry and tasteless. But this recipe changes that. These burgers are juicy and anything but bland.

Juicy Turkey Burgers Ingredients

To make these turkey burgers, the following ingredients are needed to make the burger.

  • Ground Turkey. Most ground turkey is either lean or extra lean. We use lean for these burgers
  • Mayonnaise. Added to the meat before cooking because turkey needs both a fat and a binder to make patties. Mayonnaise does double duty by working as a binder and a fat to help create a juicy burger that doesn’t fall apart.
  • Panko. Another binding ingredient that helps keep the patties from falling apart on the grill.
  • Dijon Mustard. This adds an acidic element to the turkey that also adds flavour.
  • Worcestershire Sauce. There is a ton of flavour in Worcestershire sauce.
  • Garlic. Finely minced garlic or garlic paste provides a strong taste for these burgers.
  • Fine Sea Salt. Use to season the burgers when cooking.
  • Pepper. Mixed with the salt to season the burgers on the BBQ.

Buns For Turkey Burgers

A regular hamburger bun can be used for these burgers or your favourite bun.

Brioche buns or Kaiser buns are also great choices.

Toppings add more flavour to these burgers, and some complement the turkey more than others.

Tips For Making Juicy Turkey Burgers

The thing about turkey is that it can become dry and tasteless very quickly. These tips will help create a juicy, flavourful turkey burger.

  • Moisture has to be added to the burgers. Some kind of fat is needed to keep the turkey from drying out.
  • Double up on seasoning. Because turkey can be bland, the normal amount of seasoning for burgers needs to be doubled to make up for the lack of flavour in the meat.
  • Oil the griddle. Turkey will stick to the griddle if there is not enough oil to prevent it. Using a high-smoke oil like avocado oil is a good choice.
  • The patties need a binder so they don’t fall apart. Turkey is usually lean, so it doesn’t have fat to hold it together like beef burgers do.
  • Chill the patties before grilling. If possible, chill the turkey patties before cooking them. This helps them hold their shape on the griddle.

Should Turkey Burgers Be Cooked On The BBQ or Flat Top?

Turkey burgers can be grilled or cooked on a flat top. Either way, the burgers will taste great.

To grill them, you will need to lightly coat the BBQ grates with some kind of oil. Turkey has very little fat, so it sticks easily. Brush the grates with avocado oil or spray with cooking spray before lightly brushing the BBQ.

When we make these on the Blackstone, we oil the griddle with a high smoke point oil like avocado oil. The flat top is heated on high to start, so the burgers can be seared on both sides. We use only one side of the griddle for this. The other side is heated on low, and the burgers are moved to that side after searing to finish cooking. The lid should be closed while the patties finish cooking.

How To Reheat Leftovers

If you have leftover turkey patties, store them in the fridge for up to three days in an air-tight container.

To reheat turkey patties, we like to heat them in the air fryer at a low temperature or in the microwave until heated through.

Ingredients

Turkey Patties

  • 1 pound lean ground turkey
  • ¼ cup Panko
  • Tbsp mayonnaise
  • 1 tsp Worcestershire sauce
  • 1 clove garlic, minced fine
  • 1 Tbsp Dijon mustard

Other Ingredients

  • 1 tsp sea salt
  • 1 tsp black pepper
  • 4 buns
  • toppings of your choice

Instructions

  • In a large bowl, combine all ingredients for the patties.
  • Divide the meat mixture in four and form each quarter into patties about ¼-½ inch thick.
  • Place patties on a plate and refrigerate while the grill preheats.
  • Lightly brush oil on BBQ grates or spray with cooking spray (before igniting)
  • Preheat BBQ to 375℉.
  • Mix the salt and pepper together.
  • Remove the patties from the fridge and place patties on the BBQ and season with the salt and pepper mix.
  • Cook 4-5 minutes per side and remove from heat when the internal temperature reaches 165℉.
  • Serve on buns with your favourite toppings.
