We use Granny Smith Apples in this recipe because we always have them on hand. An Asian pear can be used in its place.

There are a few tips for making this recipe that help to yield the best results.
Rinsing the short ribs before marinating them is important. The way they are cut can leave tiny shards of bone on the meat. Rinsing them will help to remove them.
Don’t overcook the short ribs. They only take a few minutes to grill on each side. If they are overcooked, they become tough and harder to chew.
Ways to Grill Short Ribs
Short ribs don’t take long to grill, just a few minutes per side. There are a few ways to grill short ribs:
- Charcoal BBQ. This is our favourite way to make this recipe. Charcoal adds a hint of smoke flavour that complements the marinade, adding that extra layer of flavour you can’t get on a gas or indoor grill.
- Gas grill. For a quick way to cook these ribs, our choice is our gas grill. It heats up quickly, making it the best option for a weeknight meal during the summer.
- Indoor grill. In colder months, we use an indoor grill to cook this recipe. This is also a great option for those who have a BBQ. (Our daughter makes these short ribs using an indoor grill since she lives in an apartment where BBQs are not allowed.
- Griddle pan. Another great option for making these short ribs indoors is using a cast-iron griddle pan.
Serving Grilled Korean-Style Short Ribs
When it comes to serving these ribs, we like to serve them on top of basmati rice with thinly sliced green onions.
A side of kimchi is great with these ribs. Or top the ribs with Sweet and Spicy Gochujang Sauce.
Stir-fried vegetables like carrots and zucchini are also great options to pair with short ribs.

Grilled Korean-Style Short Ribs
Equipment
- food processor or blender
Ingredients
- 4 pounds Korean-style short ribs, rinsed to remove any fragments
Marinade
- 1 Granny Smith apple, cored and roughly chopped
- 1 white onion, roughly chopped
- 10 garlic cloves, peeled
- 1 inch fresh ginger, peeled
- ¾ cup soy sauce
- ½ cup water
- â…“ cup brown sugar
- ¼ cup dry vermouth
- 3 Tbsp sesame oil
Instructions
- Add all the ingredients for the marinade to the food processor.
- Pulse until blended and smooth.
- Place short ribs in a shallow dish.
- Pour the marinade over the short ribs, making sure to cover completely.
- Cover and refrigerate for at least 2 hours or up to 24 hours.
- Remove the ribs from the fridge.
- Preheat grill to medium-high heat.
- Remove ribs one at a time from the marinade, allowing the excess marinade to drip off before placing them on the grill.
- Grill for 3 minutes on one side, then flip and grill the other side for 2-3 minutes.
- Serve with rice, kimchi, and or stir-fried vegetables.



Serving these for Father’s Day but I had to try them first to make sure the dads will like them. OMG! they are so good. I just know they will love these. And its so easy to make.
