Should Strawberries Be Fresh Or Frozen?
To make this quick bread, either fresh or frozen strawberries can be used. The berries are cooked briefly before adding them to the batter, making it easy to use fresh or frozen berries.
During the winter months, we use frozen berries to make this recipe. In the summer when strawberries are in season, we choose fresh local berries.
Can Strawberry Banana Bread Be Made Without The Glaze?
Yes, the bread can be made and served without the glaze. But we do recommend adding the glaze. It is easy to make and adds another level of flavour to the bread.
Serving Strawberry Banana Bread
Once cooled and glazed, this bread is easily sliced into up to twelve slices and served as a snack or dessert. We like to make this bread on Sundays to have on hand for school and work lunches.
This sweet bread is also a great addition to a brunch buffet. And we have also enjoyed this bread as an on-the-go breakfast.
Storing Glazed Strawberry Banana Bread
To keep the bread fresh, store it in an air-tight container for up to three days.
Bread can also be frozen for up to two months. When freezing, we don’t glaze the bread first because the glaze doesn’t hold up well when the bread is thawing.

Glazed Strawberry Banana Bread
Ingredients
- 1 cup strawberries, fresh or frozen, sliced
- ¼ cup white sugar
- 2 Tbsp water
- 2 small overripe bananas, about ¾ cup
- 2 eggs
- ¼ cup melted butter, cooled
- ¾ cup brown sugar
- 1½ cups all-purpose flour
- 2 tsp cinnamon
- ½ tsp baking soda
- ½ tsp nutmeg
- ¼ tsp salt
- 1 Tbsp all-purpose flour
Glaze
- 1½ cups powdered sugar
- ¼ cup reserved liquid from the strawberries
Instructions
- Preheat oven to 375℉ and grease a 9-inch bread pan.
- In a saucepan over medium-low heat, cook the strawberries with the white sugar and water for 3-4 minutes or until strawberries are slightly softened.
- Drain strawberries, reserving the liquid.
- In a large bowl, whisk together bananas, eggs, melted butter, and brown sugar.
- Add flour, cinnamon, baking soda, nutmeg, and salt, stirring until just combined.
- Fold in the strawberries.
- Pour batter into prepared pan and bake for 40-45 minutes or until the centre is cooked through.
- Cool completely.
- To make the glaze, whisk the powdered sugar with 2 tablespoons of reserved liquid from the strawberries, adding extra liquid as needed to make a thin glaze.
- Pour glaze evenly over the bread and allow to sit for 5 minutes to harden before slicing.



Made this for Mothers Day luncheon. It was better without the glaze because the glaze was too sweet. But it was still good.
