Ingredients For Cheesy Bacon Fried Corn
This simple side dish is made using the following ingredients:
- Bacon.
- Corn.
- White onion.
- Red bell pepper.
- Paprika.
- Garlic powder.
- Onion powder.
- Chili powder.
- Sea Salt.
- White pepper.
- Mozzarella.
Alternative Ingredients
For this recipe, we use frozen corn because it is readily available year-round. But in the summer we use fresh corn on the cob when it’s in season.
Sometimes when we are making this dish, we skip the spices and use a BBQ seasoning that is already made. The flavour can be changed a little by using different seasonings like Creole Seasoning or Homemade BBQ seasoning.
The mozzarella can be swapped for any other kind of cheese of your choice. We like using melty cheeses like gouda.
Add-ins For This Recipe
There are a few ingredients that can be added to this dish.
Jalapenos are one of the add-ins we like to add to this side dish. These add more flavour and a touch of heat.
Top the corn with green onions or chopped parsley to add colour and flavour.

Other Ways To Make Bacon Fried Corn
The easiest way to make this dish is on a flattop like a Blackstone. But if you don’t have one, this recipe can be made in other ways.
A cast iron pan is one way we recommend because it is similar to a flattop griddle. This is the method we use when camping to make cheesy bacon fried corn over a campfire.
A large skillet can also be used on a stovetop or side burner of a BBQ. It can also be cooked on a BBQ using a griddle that sits on top of the grates.
Serving Cheesy Bacon Fried Corn
Bacon fried corn makes a great side dish for any BBQ meal. It can be served with beef, chicken, or pork.
We have used this dish as a topping for tacos as well as adding it to burritos.
What To Do With Leftovers
Any leftover corn should be stored in the fridge in a covered container and used within three days.
Reheat the corn in a skillet or microwave.
Another great way to use leftover corn is to add it to cornbread batter in place of regular corn.

Cheesy Bacon Fried Corn
Equipment
- flattop griddle
Ingredients
- 1 pound bacon, chopped
- ½ cup diced red peppers
- ¼ cup diced white onion
- 5 cups frozen corn
- 1 Tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chilli powder
- 1 tsp sea salt
- ½ tsp white pepper
- 1 cup shredded mozzarella
Instructions
- Preheat griddle to medium heat.
- Cook bacon on one side of the preheated griddle, stirring it around until cooked, about 3-4 minutes.
- On the other side, cook the peppers and onions, stirring it into the bacon once the bacon is cooked.
- Add frozen corn to one side of the griddle in an even layer.
- Allow to cook for 2 minutes, then stir corn to mix with the bacon.
- Mix paprika, garlic powder, onion powder, chilli powder, salt and pepper together.
- Sprinkle seasoning over the corn and stir to combine.
- Add cheese and use a spatula to stir the mixture to combine the cheese into the corn mixture.
- Remove from griddle and serve immediately.
