Cheesy Bacon Fried Corn
Cheese, salty bacon and corn come together in this side dish that is made entirely on a Blackstone Griddle. Seasoned with BBQ seasonings, Cheesy Bacon Fried Corn is perfect to serve at a backyard BBQ with steaks, chicken, or any other BBQ main.

- 1 pound bacon, chopped
- ½ cup diced red peppers
- ¼ cup diced white onion
- 5 cups frozen corn
- 1 Tbsp paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp chilli powder
- 1 tsp sea salt
- ½ tsp white pepper
- 1 cup shredded mozzarella
Preheat griddle to medium heat.
Cook bacon on one side of the preheated griddle, stirring it around until cooked, about 3-4 minutes.
On the other side, cook the peppers and onions, stirring it into the bacon once the bacon is cooked.
Add frozen corn to one side of the griddle in an even layer.
Allow to cook for 2 minutes, then stir corn to mix with the bacon.
Mix paprika, garlic powder, onion powder, chilli powder, salt and pepper together.
Sprinkle seasoning over the corn and stir to combine.
Add cheese and use a spatula to stir the mixture to combine the cheese into the corn mixture.
Remove from griddle and serve immediately.
