Brownie Cookies

Fudgy Brownie cookies are soft, chewy and rich in chocolate flavour. Not overly sweet, these cookies are a delightful treat.

Easy to make with simple ingredients

With 10 ingredients, these cookies are easy to make. You can whip up a batch in less than 30 minutes.

  • All-purpose flour.
  • White sugar.
  • Cocoa powder.
  • Instant coffee granules.
  • Baking soda.
  • Salt.
  • Dark chocolate.
  • Butter.
  • Eggs.
  • Vanilla extract.

Tips For Making This Cookie Recipe

This recipe is easy to make, and these tips will make it even easier.

  • Don’t overbake the cookies. The cookies should still be soft and wet in the centre when removed from the oven. They will continue to bake as they cool. If they are overbaked, they will become very hard as they cool.
  • To get evenly sized cookies, we use a cookie scoop. Usually, we use a small scoop, and that gives us about 24 cookies. We make larger cookies using a medium scoop for making ice cream sandwiches.
  • Allow the cookies to cool for 1 minute on the pan before transferring to the cooling rack to finish cooling.
  • The addition of the coffee granules enhances the chocolate flavours. It can be skipped if you don’t have them on hand.

Ways to Serve Brownie Cookies

These cookies are great on their own with a glass of milk or a cup of tea or coffee.

In the summer, we like to turn these into ice cream sandwiches by adding vanilla ice cream between two cookies.

Storing Brownie Cookies

Once cooled, these cookies should be stored in an airtight container at room temperature. They will stay fresh for up to one week. They can also be frozen for up to three months.

Brownie Cookies

Ingredients

  • ¾ cup all purpose flour
  • ¾ cup white sugar
  • 3 Tbsp unsweetened cocoa powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 8 ounces dark chocolate, chopped
  • ¼ cup butter
  • 1 tsp instant coffee granules
  • 2 eggs
  • 1 tsp vanilla extract

Instructions

  • Preheat oven to 350°F. Line cookie sheets with parchment paper.
  • In a large bowl, whisk together flour, sugar, cocoa powder, baking soda and salt. Set aside.
  • Combine chocolate and butter in a microwave-safe dish and microwave for 30 second intervals until melted, stirring after each 30 second interval.
  • Stir coffee granules into the chocolate mixture.
  • Pour melted chocolate into flour mixture and stir. Batter will be thick.
  • Add eggs and vanilla. Stir until all ingredients are combined.
  • Drop by spoonfuls onto parchment lines cookie sheets.
  • Bake in preheated oven for 10-12 minutes. Cookies will be soft in the centre.
  • Allow to cool on cookie sheet for 1-2 minutes before transferring to cooling rack.
  • Store cooled cookies in an airtight container for up to one week.
