Bourbon Bacon Chocolate Chip Cookies

Chocolate and bourbon are a great pairing, and when you add some bacon, you have a cookie that is hard to resist.

Who doesn’t love chocolate chip cookies? These soft and chewy cookies combine the warm caramel notes of bourbon with salty bacon bits and sweet chocolate.

There are a total of nine ingredients in this cookie recipe.

What Kind Of Bourbon for Cookies?

The type of bourbon you use for these cookies depends on your personal preferences. We always say that when it comes to cooking or baking with alcohol, always use a brand you like.

We have tasted many brands of bourbon and we use whatever we have on hand to add to our recipes. Some of our favorites for baking are Long Branch, Wild Turkey, Old Forester, and Maker’s Mark.

Can The Dough Be Made Ahead?

Yes! This recipe can be made ahead of time and the dough can be covered and stored in the fridge for up to two days before baking.

When making ahead, allow an additional 1-2 minutes to bake the cookies since the dough is cold. Or bring the dough to room temperature before baking.

Serving Bourbon Bacon Cookies

These are a type of cookie we reserve for the adults. You can really taste the bourbon in these cookies so we prefer to serve them at a BBQ dinner for adults only.

These cookies go great with a glass of bourbon and a bowl of ice cream, which is our favorite way to enjoy these in the summer.

We also like to have these on hand over the holidays. They make a great gift for Christmas. We usually gift these to our friends with a tag that states they do contain alcohol so they aren’t served to children.

Can These Cookies Be Made Without Bourbon?

This recipe has only been tested with the bourbon added.

If you’re looking for a cookie without alcohol, this is not the recipe for you. Instead, try our Chocolate Chunk Cookies and add bacon to the cookie dough with the chocolate chunks.

Storing Cookies

To store these cookies, allow them to cool completely. Then place them in an air-tight container and store them at room temperature for up to three days.

If you’d like these cookies to last longer, store them in the freezer for up to three months.

Bourbon Bacon Chocolate Chip Cookies

These cookies are made with bourbon and bacon to add the flavors of caramel with salty bacon and sweet chocolate chips.

Ingredients

  • 1¼ cups white sugar
  • 2 Tbsp molasses
  • ½ cup butter, softened
  • 1 egg
  • ¼ cup bourbon
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup chocolate chips
  • ½ cup chopped cooked bacon

Instructions

  • Preheat oven to 350℉ and line a cookie pan with parchment paper.
  • In a stand mixer or larger bowl using a hand mixer, beat sugar, molasses and butter together until smooth and creamy.
  • Beat in bourbon and egg.
  • Stir in flour and baking soda.
  • Fold in chocolate chips and bacon.
  • Scoop dough using a cookie scoop or large spoon onto prepared pans, about 2 inches apart.
  • Bake in preheated oven for 12-15 minutes or until edges are golden and centers are almost cooked through.
  • Allow to cool on baking sheet for 3-4 minutes before transferring to a cooling rack to cool completely.
  • Store in air-tight container for up to 3 days.

Notes

Don't overbake the cookies. The centers should still be slightly wet when they are removed from the oven. The cookies will continue to bake on the baking pan while they cool.

    These cookies disappeared quickly at the potluck I attended. I made a double batch and there were none left at the end of the day.
