Bourbon Bacon Chocolate Chip Cookies

These cookies are made with bourbon and bacon to add the flavors of caramel with salty bacon and sweet chocolate chips.

Ingredients

  • cups white sugar
  • 2 Tbsp molasses
  • ½ cup butter, softened
  • 1 egg
  • ¼ cup bourbon
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1 cup chocolate chips
  • ½ cup chopped cooked bacon

Instructions

  • Preheat oven to 350℉ and line a cookie pan with parchment paper.
  • In a stand mixer or larger bowl using a hand mixer, beat sugar, molasses and butter together until smooth and creamy.
  • Beat in bourbon and egg.
  • Stir in flour and baking soda.
  • Fold in chocolate chips and bacon.
  • Scoop dough using a cookie scoop or large spoon onto prepared pans, about 2 inches apart.
  • Bake in preheated oven for 12-15 minutes or until edges are golden and centers are almost cooked through.
  • Allow to cool on baking sheet for 3-4 minutes before transferring to a cooling rack to cool completely.
  • Store in air-tight container for up to 3 days.

Notes

Don't overbake the cookies. The centers should still be slightly wet when they are removed from the oven. The cookies will continue to bake on the baking pan while they cool.
