Serving Apple Cinnamon Cake

We enjoy this cake served warm. But it can also be served at room temperature.

It is great with a scoop of ice cream on top. We like to top the ice cream with a caramel sauce to make it more decadent.

Once cooled, cover the cake and store it at room temperature for up to three days.

What Kind Of Apples Work Best?

We make this cake with Honeycrisp apples because of their sweetness, and they hold up well for baking.

Granny Smith and Cortland apples are also good choices.

Avoid softer apples like McIntosh. These break down when baked and become mushy.

Additions For The Cake

If you’d like to add a little crunch to the cake, consider adding nuts to the top of the cake or to the apple filling. Walnuts, almonds and pecans work well and complement the flavours of the cake.

Ingredients

Cake Batter

  • cup all-purpose flour
  • ¾ cup white sugar plus 2 Tablespoons, divided
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ cup butter, softened
  • 2 eggs,
  • ½ cup sour cream
  • 3 Tbsp milk
  • tsp vanilla extract

Filling

  • 2 apples, peeled, cored and chopped into small pieces
  • 3 Tbsp brown sugar
  • 1 Tbsp cinnamon

Glaze

  • ½ cup confectioner's sugar
  • 1-2 Tbsp milk

Instructions

  • Preheat oven to 350℉ and grease an 8-inch square cake pan.

Cake Batter

  • In a large bowl, whisk together flour, ¾cup sugar, baking powder, and baking soda.
  • Divide butter into small pieces and add to the flour mixture, stirring to break it up.
  • Add eggs, sour cream, milk, and vanilla extract, stirring until smooth and fully combined.

Filling

  • In a small bowl, toss apple pieces with sugar and cinnamon to coat.

Assembling The Cake and Baking

  • Pour about half of the cake batter into the prepared pan.
  • Top with apple filling.
  • Drop the remaining cake batter over the apples and smooth out over the top. It is okay if apples are not completely covered.
  • Sprinkle the 2 tablespoons of sugar over the top.
  • Bake for 30-35 minutes.

Glaze

  • Whisk confectioner's sugar and milk together until smooth.
  • Remove the cake from oven and let cool slightly before drizzling the glaze over the top.
  • Serve warm.
