Apple Cinnamon Cake

A simple recipe that is quick and easy to put together and is perfect for dessert or snack. The apple filling adds crunch to the cake as well, giving it an additional layer of texture.

Ingredients

Cake Batter

  • cup all-purpose flour
  • ¾ cup white sugar plus 2 Tablespoons, divided
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ cup butter, softened
  • 2 eggs,
  • ½ cup sour cream
  • 3 Tbsp milk
  • tsp vanilla extract

Filling

  • 2 apples, peeled, cored and chopped into small pieces
  • 3 Tbsp brown sugar
  • 1 Tbsp cinnamon

Glaze

  • ½ cup confectioner's sugar
  • 1-2 Tbsp milk

Instructions

  • Preheat oven to 350℉ and grease an 8-inch square cake pan.

Cake Batter

  • In a large bowl, whisk together flour, ¾cup sugar, baking powder, and baking soda.
  • Divide butter into small pieces and add to the flour mixture, stirring to break it up.
  • Add eggs, sour cream, milk, and vanilla extract, stirring until smooth and fully combined.

Filling

  • In a small bowl, toss apple pieces with sugar and cinnamon to coat.

Assembling The Cake and Baking

  • Pour about half of the cake batter into the prepared pan.
  • Top with apple filling.
  • Drop the remaining cake batter over the apples and smooth out over the top. It is okay if apples are not completely covered.
  • Sprinkle the 2 tablespoons of sugar over the top.
  • Bake for 30-35 minutes.

Glaze

  • Whisk confectioner's sugar and milk together until smooth.
  • Remove the cake from oven and let cool slightly before drizzling the glaze over the top.
  • Serve warm.
