The ingredients for the chicken patties are simple:

  • Ground chicken.
  • Green onions.

  • Cumin.
  • Ground cardamom.

  • Plain Skyr yogurt. This can be full fat or 0% milk fat.

Skyr yogurt is a Icelandic style yogurt that is thicker than Greek yogurt and is high in protein.

Substitutions For Sauce Ingredients

If you can’t find Skyr, you can use plain Greek yogurt instead. It is still thick and can hold up to the addition of lemon juice.

Black pepper can be used instead of white if you don’t have white on hand. 

Tips For Making Blackstone Spiced Chicken On Naan

This recipe is very easy to make, but these tips make it even easier and ensure great results.

  • The yogurt sauce is better if it is made at least an hour before serving. Usually, we will make it in the morning and leave it covered in the fridge until we are ready to use it. This gives the flavours time to meld together. 
  • When we are making the chicken patties, we like to use a kitchen scale to weigh the meat. This way all the patties are evenly sized for better cooking. 
  • To prevent the chicken from sticking to your hands as you form the patties, lightly wet your hands before forming each patty.
  • Don’t overcook the patties. This leads to dry chicken. Use a meat thermometer to test the middle of the chicken patty. It is ready when it hits 165ºF.

Ingredients

  • oil for the griddle

Spiced Chicken Patties

  • 1 pound ground chicken
  • 3 green onions, finely chopped
  • 3 Tbsp freshly grate ginger
  • 2 garlic cloves, grated or minced
  • 2 Tbsp lemon juice
  • 1 Tbsp paprika
  • 1 Tbsp cumin
  • ½ tsp ground cardamom
  • ½ tsp cayenne pepper
  • ½ tsp sea salt
  • ¼ tsp pepper

Yogurt Sauce

  • 1 cup Skyr yogurt or Greek yogurt
  • 2 Tbsp freshly chopped mint leaves
  • 1 Tbsp lemon juice
  • zest of half a lemon
  • 1 tsp cumin
  • ½ tsp sea salt
  • ¼ tsp white pepper

Bread and Toppings

  • 8 Naan rounds
  • lettuce
  • tomato slices
  • sliced cucumbers
  • diced red onions

Instructions

Chicken Patties

  • In large bowl, mix ground chicken with the green onions, ginger, garlic, lemon juice and spices, mixing until just combined.
  • Divide the mixture into 4 equal portions.
  • Form each portion into a flattened patty, cover and set aside.

Yogurt Sauce

  • Mix all ingredients together in a small bowl.
  • Cover a refrigerate until ready to use.

Cooking the Patties

  • Preheat the griddle to medium heat.
  • Generously oil the griddle with your choice of oil.
  • Place the chicken patties on the hot griddle.
  • Gently press down on the patties to flatten.
  • Cook 3-4 minutes per side, or until the patties are 165℉ in the middle.
  • Place the naan on the other side of the griddle to heat for 45 seconds, flipping after 30 seconds.
  • Serve the chicken patties on the heated naan with the yogurt sauce and toppings of your choice.
