How To Make Crispier Grilled Sweet Potatoes
Soaking the sweet potatoes in water for 30 minutes before grilling helps to remove some of the starch. This helps to make the outside of the sweet potato crispy.
It is important to dry the sweet potatoes with paper towels or a kitchen towel before mixing the sweet potato wedges with the spices.
The addition of cornstarch in the spice mix also helps to crisp the outside of the sweet potatoes while grilling. This same concept is used in deep frying sweet potato fries.
While grilling the sweet potatoes, brush them with the leftover oil and spices from the bottom of the mixing bowl when turning them. This keeps them from sticking and ensures you get the full flavour.
Tools We Use To Make This Recipe
When making this recipe there are a few tools that make it easier to make.
There are times when the wedges would fall between the grates and that was frustrating. We started using a grill mat on the BBQ to stop the wedges from falling and make it easier to flip them.
Alternative To Cooking On The BBQ
Although we like to cook these on the BBQ, these can also be cooked on the Blackstone or similar outdoor griddle.
- To cook on the griddle, heat it to medium, generously oil your griddle and place the wedges in the oil.
- If you have a melting dome, place it over the sweet potatoes to help cook them evenly and quicker. No melting dome? An upside down cake pan works just as well.
- A small amount of water sprayed over the wedges before covering will help steam the potatoes and cook them faster.
- Flip the wedges every 4-5 minutes to ensure they don’t burn on one side.
Serving Grilled Sweet Potatoes
One of the best ways to serve these sweet potatoes is with a Chipotle dipping sauce, like our Homemade Chipotle Sauce.
To create a complete meal, these sweet potatoes go great with Sticky BBQ Drumsticks and grilled corn on the cob.
What To Do With Leftovers
These sweet potatoes are similar to french fries so they don’t hold up well when reheating.
If you do have leftovers, we don’t recommend reheating in a microwave because they will become soggy.
Instead, reheat grilled sweet potatoes in an air fryer at 350ºF for 4-5 minutes to maintain the crispiness and flavour.
Sweet potato wedges can be reheated on the griddle, which crisps them back up.
