Ingredients For These Easy S’Mores Cookies

These cookies are similar to chocolate chip cookies and use mostly the same ingredients.

Equipment for Making S’mores Cookies

A stand mixer or hand mixer makes this recipe easier to make. A mixer helps to cream the butter and sugars easier than doing it by hand.

To toast the marshmallows, we recommend a kitchen torch. Using a torch makes it easier to toast the marshmallows and make them look campfire-toasted.

Tips For Making These Cookies

S’mores Cookies are easy to make. Bake them like you would any basic chocolate chip cookies, then add the marshmallows when you remove them from the oven.

After placing the marshmallows, toast them on the cookies using a torch, being careful not to burn them too much. They can catch on fire just like toasting them over a campfire.

Break graham crackers by hand to get different-sized pieces, keeping the pieces smaller than a dime.

To make these cookies uniform in size, we use a small scoop like the one in this set. The medium-sized scoop can also be used by adjusting the baking time to add 2-3 minutes.

Storing Cookies

To keep these cookies fresh, store them in an air-tight container for up to three days.

Cookies can also be frozen for up to two months without the marshmallows on top. Add marshmallows after thawing at room temperature.

Ingredients

  • ¾ cups butter, softened
  • 1 cup brown sugar
  • ¼ cup white sugar
  • 2 eggs
  • 2 Tbsp milk
  • 1 tsp vanilla extract
  • 1½ cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • ½ cup graham cracker pieces
  • 1 cup chocolate chips
  • 1½ cups mini marshmallows, approximately, we add 3 marshmallows on top of each cookie

Instructions

  • Preheat oven to 350℉ and line cookie sheets with parchment paper.
  • In a large bowl, or stand mixer, cream butter with both sugars until smooth and creamy.
  • Add eggs, milk, and vanilla extract, stirring to combine.
  • Mix in flour, baking powder, baking soda, and salt until just combined.
  • Fold in graham cracker pieces and chocolate chips.
  • Scoop dough using small cookie scoop or a tablespoon onto prepared pans, spacing about 2 inches apart.
  • Bake for 12 minutes or until cookie edges are golden but centers are still slightly wet.
  • Remove from oven and place three marshmallows on top of cookies immediately, pressing gently.
  • Allow to cool on pan for 2 minutes before transferring to cooling rack.
  • Using torch, toast the marshmallows on cookies until toasted, careful not to set them on fire.

Notes

Graham crackers can be broken up by hand for this recipe. Don't use graham crumbs because the flavor won't be the same. 
Broken chocolate bars can also be used in place of the chocolate chips.
