These cookies are soft, lightly spiced, and taste like a cross between carrot cake and carrot muffins. Spiced with cinnamon and other warm spices, these cookies are the perfect afternoon treat.

When grating the carrots use the finest grate. This will help the carrots to blend into the batter evenly.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp nutmeg
  • ¼ tsp sea salt
  • ½ cup butter, softened
  • ½ cup white sugar
  • ½ cup brown sugar
  • 2 eggs
  • tsp vanilla extract
  • cups finely grated carrots

Instructions

  • Preheat oven to 350℉ and line cookie sheets with parchment or silicone mat
  • In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and sea salt. Set aside.
  • In the bowl of a stand mixer, cream butter for 2 minutes.
  • Add sugars and cream until smooth.
  • Add eggs and vanilla, stirring to combine.
  • Fold in carrots.
  • Scoop batter onto prepared pans, leaving about 1½ -2 inches between cookies.
  • Bake 12 minutes.
  • Cool 2-3 minutes on the pans before transferring to a cooling rack to finish cooling.
  • Store cooled cookies in an air-tight container.
