Soft Carrot Cookies

Soft and chewy with a hint of spice, these carrot cookies make a great treat, snack, or dessert.

Ingredients

  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 1 tsp nutmeg
  • ¼ tsp sea salt
  • ½ cup butter, softened
  • ½ cup white sugar
  • ½ cup brown sugar
  • 2 eggs
  • tsp vanilla extract
  • cups finely grated carrots

Instructions

  • Preheat oven to 350℉ and line cookie sheets with parchment or silicone mat
  • In a bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, ginger, and sea salt. Set aside.
  • In the bowl of a stand mixer, cream butter for 2 minutes.
  • Add sugars and cream until smooth.
  • Add eggs and vanilla, stirring to combine.
  • Fold in carrots.
  • Scoop batter onto prepared pans, leaving about 1½ -2 inches between cookies.
  • Bake 12 minutes.
  • Cool 2-3 minutes on the pans before transferring to a cooling rack to finish cooling.
  • Store cooled cookies in an air-tight container.
