Reese’s Pieces Cookie Bars

Chocolate and peanut butter come together in these Reese’s Pieces Cookie Bars to create a dessert that will disappear in no time. And this recipe is so easy to make, you can enjoy these any time the craving hits.

Ingredients For Reese’s Pieces Cookie Bars

To make these bars, the following ingredients are needed:

  • Butter
  • Peanut Butter
  • Brown Sugar
  • White Sugar
  • Milk
  • Egg
  • All-purpose Flour
  • Baking Soda
  • Salt
  • Reese’s Pieces (We use smaller ones that are meant for baking, but regular ones work just fine as well)
  • Chocolate Chips (Semi-sweet or Dark)

What Pans to Use For Baking

There are a few different pans that we have tested this recipe with.

A square 8-inch cake pan is how we first made this recipe. We have been making them in that size pan for years.

We have also made these in a brownie pan. This way makes the cookie bars thinner and we can get more pieces out of a batch, which is perfect for larger families or gatherings.

Our newest and favourite way to make these is using silicone pans that are 11 inches by 5 inches. We get two pans with one batch, and we cut them into strips. The strips are also great for dipping in milk, melted chocolate or peanut butter.

Serving and Storing Reese’s Pieces Cookie Bars

These cookie bars make a great snack or dessert. We cut them into squares or strips before serving.

Cut Reese’s Pieces Cookie bars into squares and top with ice cream and a drizzle of chocolate syrup for a dessert that is perfect for a BBQ.

Any leftover cookie bars should be stored in an airtight container at room temperature. They will stay fresh this way for up to 3 days.

Can You Freeze Reese’s Pieces Cookie Bars?

Absolutely! These bars freeze well for up to three months when wrapped in parchment or plastic wrap, then placed in a freezer safe container. 

Thaw the bars at room temperature before serving.

Reese’s Pieces Cookie Bars

An easy-to-make recipe that is filled with Reese's pieces and chocolate chips in a peanut butter cookie base.

Ingredients

  • 7 ounces butter
  • ½ cup peanut butter
  • 1 cup brown sugar
  • ½ cup white sugar
  • 3 Tbsp milk
  • 1 egg
  • 3 cups all-purpose flour
  • 1 tsp baking soda
  • ½ tsp salt
  • 1 cup Reese's Pieces
  • 1 cup chocolate chips

Instructions

  • Preheat oven to 350℉ and line an 8-inch square pan with parchment paper or lightly grease the pan.
  • Melt the butter with the peanut butter over medium-low heat until fully melted and combined, stirring.
  • Remove from heat and allow to cool about 3-4 minutes.
  • In a large bowl, combine both sugars.
  • Pour in the slightly cooled butter and peanut butter mixture, whisking until smooth.
  • Stir in milk, then beat in the egg.
  • Add flour, baking soda, and salt, stirring to combine.
  • Fold in the Reese's Pieces and chocolate chips.
  • Spread batter into the prepared pan and bake in preheated oven for 25-30 minutes or until the centre of cookie bars is just baked.
  • Cool completely in the pan before cutting into squares and serving.
  • Store leftovers in an airtight container at room temperature.
