Mini Oatmeal Loaves

Mini Oatmeal Loaves are extremely easy to make and are the perfect snack or on-the-go breakfast. And these can be changed up with an add-in so you can have different flavours every time you make them.

Ready in about 30 minutes, these mini loaves are full of oatmeal flavour and add-ins make them even better.

What Ingredients Are Needed for Mini Oatmeal Loaves?

To make these mini oatmeal breads, there are a total of nine ingredients:

  • Milk. Whole, 2% or skim milk works for this recipe.
  • Quick Oats. Either quick or 1-minute oats will work best for this recipe.
  • Brown sugar. Our go-to is yellow or golden brown sugar, but we have used dark and it gives the loaves a stronger molasses flavour.
  • Vanilla.
  • Egg.
  • All-purpose flour.
  • Baking soda.
  • Fine sea salt.
  • Vegetable oil. This can be vegetable, corn or canola oil. For a richer taste, swap the oil for melted and cooled butter.

Add-ins for Mini Oatmeal Loaves

These mini breads are great on their own, but there are a few add-ins that take them up a notch.

  • Chocolate chips. To get our daughter to eat these, we add chocolate chips to the batter. Our favourite is dark chocolate.
  • Raisins. Sultana or Thompson raisins are a nice addition.
  • Dried cranberries.
  • Diced apple pieces.
  • Walnut pieces.

Equipment For Making Mini Oatmeal Loaves

Not much is needed for this recipe in the line of equipment. A large mixing bowl and spatula or spoon to stir the batter. Measuring cup and measuring spoons.

The pan used to make this recipe is a mini loaf pan. We don’t use paper liners in the pan when making these, but they can be used for easier cleanup.

Storing These Oatmeal Loaves

Store oatmeal loaves in an airtight container at room temperature for up to three days.

These small sweet breads can also be frozen for up to three months. Thaw at room temperature before serving.

Ingredients

  • 1 cup milk
  • 1 cup oats
  • 1 cup brown sugar
  • 1 egg
  • 4 Tbsp vegetable oil
  • 1 Tbsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking soda
  • ½ tsp fine sea salt

Instructions

  • In a large bowl, stir together oats and milk and set aside for 5 minutes.
  • Preheat oven to 350℉ and grease the mini loaf pan.
  • Add brown sugar, egg, oil, and vanilla to the oats, and stir.
  • Stir in flour, baking soda and salt.
  • Divide the batter evenly into the mini loaf pan.
  • Bake for 20-22 minutes or until baked through.
  • Allow to cool for 2-3 minutes in the pan before removing and cooling completely on wire racks.
