Mini Oatmeal Loaves
Ready in about 30 minutes, these oatmeal loaves make a great breakfast or snack.

- 1 cup milk
- 1 cup oats
- 1 cup brown sugar
- 1 egg
- 4 Tbsp vegetable oil
- 1 Tbsp vanilla extract
- 1 cup all-purpose flour
- 1 tsp baking soda
- ½ tsp fine sea salt
In a large bowl, stir together oats and milk and set aside for 5 minutes.
Preheat oven to 350℉ and grease the mini loaf pan.
Add brown sugar, egg, oil, and vanilla to the oats, and stir.
Stir in flour, baking soda and salt.
Divide the batter evenly into the mini loaf pan.
Bake for 20-22 minutes or until baked through.
Allow to cool for 2-3 minutes in the pan before removing and cooling completely on wire racks.
