This recipe takes Rice Krispie Treats to another level with two layers of flavour on top, caramel and chocolate. The combination of caramel and chocolate is what makes these treats decadent.
Ingredients For Rice Krispies Millionaire Treats
To make this recipe, there are three parts to this recipe.
The base:
- Butter.
- Marshmallows.
- Vanilla extract.
- Rice Krispies cereal.
The caramel layer:
- Sweetened condensed milk.
- Butter.
- White sugar.
The chocolate topping:
- Dark chocolate.
- Coconut oil.
Optional Topping For These Treats
Flaky salt or coarse sea salt can be added on top of the chocolate layer before setting. These bars can be very sweet but just a sprinkle of salt over the dark chocolate layer can cut the sweetness and give these bars a salty sweet taste.

Can Other Chocolate Be Used In This Recipe?
Yes, semi-sweet chocolate or milk chocolate can be used, but we highly recommend using dark chocolate to balance the sweet flavours of this treat.
The combination of marshmallows in the base and the caramel can make these bars very sweet. Dark chocolate has more of a bitter flavour that will help balance the sweetness of the other layers.
Why Add Coconut Oil To the Chocolate?
Adding a little amount of coconut oil to the chocolate when melting, makes the chocolate easier to cut through once set.
Without the oil, the chocolate will harden and it is not only harder to cut, but it can also be harder to bite through.
Tips For Making The Rice Krispies Base
Melting the marshmallows over medium-low heat works best and they should be stirred frequently so the marshmallows don’t stick to the bottom of the pot.
When adding the cereal to the melted marshmallows, we have found that using a large silicone spatula works better than a spoon.
A spatula is also handy for spreading the cereal mixture into the pan. We like to spray the spatula with cooking spray so that the cereal doesn’t stick to it.
And, to smooth the top of the base we use a bowl scraper that has been sprayed or oiled to pat down the cereal and create a smooth even top.
Tips For Making The Caramel
The caramel is easy to make but does need to be stirred constantly or it can burn to the bottom of the pot making it unuseable.
We use a wire whisk to constantly stir the mixture until it is a light golden brown. If the mixture gets too dark, the caramel will become thicker and harder to cut and bite through once cooled. A light almost tan colour is perfect for these squares.
Small darker flakes may occur in the caramel. This is normal, but if too many start to form, you may need to start over. This is caused by the heat being too high and the bottom starts to burn. If you see the flakes, turn down the heat.
What Size Pan To Use
This recipe is made in a 9-inch square cake pan. But it can also be made in an 8-inch pan or other sizes as well.
Our choice is the brownie pan because it makes pieces that are not as tall and we can get more servings out of that size pan. These are sweet so a small piece goes far.

Millionaire Rice Krispies Treats
Ingredients
Rice Krispies Layer
- ¼ cup butter
- 5 cups marshmallows
- 1 tsp vanilla extract
- 5 cups Rice Krispies cereal
Caramel Layer
- 1 can sweetened condensed milk, 300 ml
- ½ cup butter
- ½ cup white sugar
Chocolate Layer
- 270 grams dark chocolate
- 1½ tsp coconut oil
Instructions
- Grease a 9-inch square cake pan and line with parchment paper.
Rice Krispie Layer
- In a large pot, melt the butter over medium-low heat.
- Add marshmallows and continue cooking, stirring until marshmallows are melted and the mixture is smooth.
- Remove from heat and stir in vanilla extract.
- Add cereal stir to coat the cereal.
- Spread cereal mixture into the prepared pan and gently press into the pan to create an even layer. Set aside.
Caramel Layer
- Add condensed milk, butter and sugar to a saucepan.
- Cook over medium-low heat, stirring constantly until the mixture thickens and turns a light golden brown, about 6-8 minutes.
- Remove from heat and pour over the Rice Krispies layer, using a spatula to spread it evenly over the cereal base.
- Place in fridge to set the caramel, about 15-20 minutes. (Place in the freezer for 5-10 minutes)
Chocolate Layer
- Place the chocolate in the top of a double boiler, or a large heat-proof glass bowl.
- Add the coconut oil and melt over simmering water until melted and smooth.
- Pour the chocolate over the caramel layer, using a spatula to spread it evenly over the entire top.
- Allow the chocolate to set before cutting into squares for serving.
- Store in the fridge for up to a week.
