Ingredients For Chocolate Mayo Bundt Cake
For this cake, you will need the following ingredients:

- Unsweetened cocoa powder.
- Baking powder.
- Baking soda.

- Milk.
- Vanilla.

What Does Mayonnaise Do In A Cake?
Mayonnaise is made from eggs and oil, which are two ingredients that are needed in most cake batters.
Adding mayonnaise to your cake batter provides the cake with fat, protein and moisture that are essential to a cake’s structure and flavour.
Can this Cake Recipe Be Baked In Different Type Of Pans?
Yes, this cake can be baked in round cake pans if you prefer a layered cake. The batter will fill two 9-inch round pans. The time in the oven will need to be reduced to about 30 minutes.

When making a layered cake or cupcakes with this recipe, we use buttercream icing instead of the glaze.
Storing Leftover Chocolate Mayo Bundt Cake
This cake will stay fresh at room temperature for up to three days if it is covered.
The cake can also be frozen without the glaze for up to three months, and thawed at room temperature before adding the glaze.

Chocolate Mayo Bundt Cake
Ingredients
Cake ingredients
- 2â…“ cups all-purpose flour
- â…” cup unsweetened cocoa powder
- 1½ tsp baking powder
- 1 tsp baking soda
- ¼ tsp salt
- 3 large eggs
- 1½ cups white sugar
- 1 tsp vanilla extract
- 1 cup mayonnaise
- 1 cup strong, freshly brewed coffee
Chocolate Glaze
- 2 Tbsp butter
- ¼ cup unsweetened cocoa powder
- 3 Tbsp milk
- ½ tsp vanilla extract
- 1¼ cups powdered sugar
Instructions
Cake
- Preheat oven to 325°F.
- Grease a bundt pan and set aside.
- Whisk together flour, cocoa, baking soda, baking powder and salt in a medium-sized bowl.
- In a large bowl, beat eggs with sugar and vanilla extract.
- Stir in flour mixture, alternating with mayonnaise, until all ingredients are just incorporated.
- Pour in coffee and stir to combine.
- Pour into prepared pan and bake in preheated oven for 50-55 minutes.
- Cake is done when a toothpick inserted in centre comes out clean.
- Let cool in pan for 15 minutes before removing from pan to cool completely on a rack.
Chocolate glaze
- Melt butter in a small saucepan over low heat.
- Stir in the cocoa powder and milk.
- Cook, stirring until slightly thickened.
- Remove from heat, and stir in vanilla.
- Gradually add powdered sugar, starting with 1 cup and adding 1 tablespoon at a time until smooth. It should be thick but pourable.
- Pour over the top of cake. Allow glaze to set about 30 minutes before slicing the cake and serving.
