Chocolate Mayo Bundt Cake

Ingredients

Cake ingredients

  • 2⅓ cups all-purpose flour
  • cup unsweetened cocoa powder
  • tsp baking powder
  • 1 tsp baking soda
  • ¼ tsp salt
  • 3 large eggs
  • cups white sugar
  • 1 tsp vanilla extract
  • 1 cup mayonnaise
  • 1 cup strong, freshly brewed coffee

Chocolate Glaze

  • 2 Tbsp butter
  • ¼ cup unsweetened cocoa powder
  • 3 Tbsp milk
  • ½ tsp vanilla extract
  • cups powdered sugar

Instructions

Cake

  • Preheat oven to 325°F.
  • Grease a bundt pan and set aside.
  • Whisk together flour, cocoa, baking soda, baking powder and salt in a medium-sized bowl.
  • In a large bowl, beat eggs with sugar and vanilla extract.
  • Stir in flour mixture, alternating with mayonnaise, until all ingredients are just incorporated.
  • Pour in coffee and stir to combine.
  • Pour into prepared pan and bake in preheated oven for 50-55 minutes.
  • Cake is done when a toothpick inserted in centre comes out clean.
  • Let cool in pan for 15 minutes before removing from pan to cool completely on a rack.

Chocolate glaze

  • Melt butter in a small saucepan over low heat.
  • Stir in the cocoa powder and milk.
  • Cook, stirring until slightly thickened.
  • Remove from heat, and stir in vanilla.
  • Gradually add powdered sugar, starting with 1 cup and adding 1 tablespoon at a time until smooth. It should be thick but pourable.
  • Pour over the top of cake. Allow glaze to set about 30 minutes before slicing the cake and serving.
