Why Use Two Different Cheeses In This Sauce?

We like to use two types of cheese in this sauce. The sharp cheddar offers a ton of flavour. 

The addition of mozzarella helps with the smoothness of the sauce because it melts so well. Gouda or another melting cheese can be used in place of mozzarella. 

A jalapeno cheddar can also be added in place of the sharp cheddar to add a touch of heat. We like to use Armstrong Mexican Fiesta Marble Cheddar. 

Other Ways to Use This Sauce

Although this sauce is great on broccoli, it can also be used on cauliflower.

Also, the sauce makes a great topping for baked potatoes.

Use this cheese sauce as a dip as well. Keep it warm in a small crockpot or fondue pot for dipping pretzels, corn chips, raw vegetables, and more.

How To Store Leftover Cheese Sauce For Broccoli

Any leftover sauce can be stored in the fridge for up to three days in an airtight container.

We don’t recommend freezing the sauce because, in the tests we have done, the sauce tends to separate, and the texture becomes crumbly.

Reheating Cheese Sauce

To reheat the sauce, heat it over low heat in a saucepan, stirring. Add 1-2 Tablespoons of milk if needed to thin the sauce.

Ingredients

  • 1 Tbsp butter
  • 1 Tbsp all-purpose flour
  • 1 cup milk
  • cups shredded cheddar
  • ½ cup shredded mozzarella
  • ½ tsp garlic powder
  • ½ tsp pepper

Instructions

  • In a small saucepan, melt the butter over medium-low heat.
  • Add the flour to the melted butter, and cook for 2-3 minutes, stirring, until the mixture is heated and starting to brown.
  • Slowly add the milk to the saucepan, stirring constantly, until the milk is combined with the flour mixture.
  • Add the cheeses, ¼ of a cup at a time, whisking between additions, until all the cheese is added and melted.
  • Stir in the garlic and pepper.
  • Serve hot over steamed broccoli or cauliflower.
