Add-ins and Alternatives For Ingredients
There are a few ways to change this recipe to make it slightly different.
Brandy is what we use in this recipe instead of vanilla extract, but vanilla can be used. We have also had good results with using bourbon.
Add half of a cup of chopped pecans or walnuts to the batter with the butterscotch chips to add crunch to the bread.
Remove the bread from the pan promptly after taking it from the oven. Leaving it in the pan will result in the bread becoming soggy on the bottom.
Allow the bread to cool for 10-15 minutes before slicing. It will slice easier after cooling for a bit.
Tips For Making Butterscotch Banana Bread
When it comes to any type of banana bread, these tips will help you to produce a great loaf.
Don’t overmix the batter. It should only be stirred enough to mix the dry and wet ingredients. Overmixing will activate the gluten and cause the bread to be tough.
Use ripe bananas. The bananas should be black without any mold. A little yellow is ok.

The addition of butterscotch chips was ok but I prefer banana bread without anything added to it. Next time I will try it without.
