Butterscotch Banana Bread

Butterscotch and banana combine to make this sweet bread that is sure to satisfy.

Ingredients

  • 4 medium-sized bananas, overripe and mashed
  • 1 egg
  • cup vegetable oil
  • 2 Tbsp brandy or vanilla extract
  • ¾ cup brown sugar
  • 2 cups all-purpose flour
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ¼ tsp salt
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • 1 cup butterscotch chips

Instructions

  • Preheat oven to 350℉ and grease a 9-inch bread pan.
  • In a large bowl, whisk bananas, egg, oil, brandy, and brown sugar together.
  • In a separate bowl, stir flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  • Pour dry ingredients into the wet ingredients, stirring until barely combined. Some dry ingredients should still be visible and not fully combined.
  • Stir in the butterscotch chips. The dry ingredients should now be just combined.
  • Pour into prepared pan and bake for 45-55 minutes until until toothpick inserted in the center comes out clean.
  • Remove the bread from the pan and allow to cool on a wire rack for 10-15 before slicing.
  • Store bread at room temperature after cooling wrapped tightly in plastic wrap.
