Fried rice is a favourite of our family and homemade chicken fried rice means no MSG is added to the dish and we can control the amount of salt in the dish.

Ingredients For Blackstone Chicken Fried Rice

The ingredients in this fried rice are similar to traditional chicken fried rice with a few exceptions.

  • Chicken breasts. Boneless, skinless chicken is what we use and sometimes we use thighs in place of the breasts. A combination of thighs and breasts is also a good choice.
  • Rice. Traditionally long-grain rice such as Jasmine rice is used, but we prefer using Basmati to make this dish.
  • Corn. Fresh or frozen corn will work in this dish. During the summer when corn is in season, we use fresh roasted corn on the cob.
  • Red Pepper. Diced red, yellow, or orange peppers add flavour and colour.
  • White onion. Diced into small pieces, this adds additional flavour to the rice.
  • Garlic. Fresh or jarred minced garlic can be used.
  • Ginger. We prefer fresh ginger that we grate finely.
  • Soy Sauce. Reduced sodium soy sauce is our go-to.
  • Sesame oil. This is an ingredient that is used sparingly because it can be strong tasting. But it is necessary to achieve the best results for flavour.
  • Eggs. Added at the end, in the final couple of minutes of cooking. Eggs make the rice taste better and help bring all the flavours together.
  • Green onion. Finely chopped and added last.
  • Salt and pepper.
  • Vegetable oil. Only a small amount is used for cooking the chicken.

Additional Add-Ins

Usually, fried rice from take-out has peas. If you like peas can be added or they can replace the corn in the recipe.

Diced carrots are also a great add-in for both colour and flavour.

If you’d like to add a little heat, a dash or two of sriracha can be added. Or add a finely diced chili pepper such as jalapeno or poblano peppers.

Tips For Making Blackstone Chicken Fried Rice

This recipe takes little time to make if everything is prepared ahead of time.

  • Cook the rice while prepping the other ingredients. We use a rice cooker to make the rice and it is usually done by the time we finish chopping the vegetables and chicken.
  • We have all the ingredients pre-measured and ready to go before we light the griddle. This makes it quicker to make the recipe if everything is ready because the ingredients don’t take long to cook.

Can This Rice Dish Be Cooked Without a Flattop?

Yes, this dish can be made without a flattop. Instead, it can be cooked in a cast iron skillet, although the recipe is large and may have to be cooked in batches.

A large wok also works for cooking this rice dish.

Serving Chicken Fried Rice

This dish has a lot of chicken so it can be served on its own. We make this rice on a 22-inch Blackstone griddle and it takes up the entire surface.

This rice can be served as a side dish with other similar flavours. We like serving this rice dish with char sui ribs or Gochujang Chicken thighs.

We also like to have leftovers for lunches for the week.

Storing Leftover Blackstone Chicken Fried Rice

The recipe for this fried rice makes a large amount because we like having leftovers for the next day. Halving the recipe is an option if you don’t want leftovers.

Leftover chicken fried rice should be cooled and stored in the fridge covered. It will last in the fridge for up to three days.

Reheat rice in the microwave for 1 minute, stirring halfway through, or until heated.

Blackstone Chicken Fried Rice

Ingredients

  • 2 cups basmati rice, uncooked
  • 2 pounds boneless, skinless chicken
  • 1-2 Tbsp vegetable oil
  • 1 tsp sea salt
  • 1 tsp black pepper
  • 3 garlic cloves, minced
  • 1 Tbsp finely grated ginger
  • 1 small white onion, diced
  • 1 red pepper, diced
  • 2 cups corn
  • ½ cup soy sauce
  • 1 Tbsp sesame oil
  • 2 eggs, beaten
  • ¼ cup sliced green onion

Instructions

  • Cook rice according to package directions and set aside.
  • Heat griddle to medium.
  • Add vegetable oil to griddle if needed.
  • Season chicken with salt and pepper.
  • Cook chicken on one side of the griddle for 3-5 minutes or until just cooked. Flipping the chicken a few times to cook all sides evenly.
  • Cook garlic and ginger for 1 minute.
  • Add red pepper and onion to the garlic and cook, stir-frying until peppers and onions are softened.
  • Mix chicken and vegetables together and add corn. Stir-fry for 2 minutes
  • Add rice, soy sauce, sesame oil, and eggs.
  • Mix together well and cook, stir-frying the mix until egg is cooked and all ingredients are well blended.
  • Add green onions and serve.
