How To Serve Meatloaf
Besides the usual mashed potatoes, serve this meatloaf with any of these side dishes:
- Rice. Place a slice of the meatloaf on top of the rice and drizzle additional glaze over the slice.
- Corn on the cob.
- Mixed vegetables. We like to serve this meatloaf with a stir-fry of vegetables on the side. Vegetables like broccoli, julienned carrots, snap peas, and baby corn are some of our favourites.
- Salad. We top the salad with sesame dressing and fried noodles for extra crunch and to keep with the flavours.
Leftover Meatloaf
Any leftover meatloaf should be kept in the fridge. It will last up to three days in the fridge.
Reheat the meatloaf in the oven or microwave before serving.
We also like to slice it and fry the slices until they are crispy. Then serve the slices on toasted buns with coleslaw and extra glaze.
Use this meatloaf in a sandwich like our Griddle Meatloaf Sandwiches. These make a great lunch.
