No Knead Cinnamon Raisin Bread is one of the easiest bread recipes. This bread is a comforting treat, packed with cinnamon and lots of raisins.

The hardest part of this recipe is waiting for the bread to rise and bake.
Ingredients For No Knead Cinnamon Raisin Bread
The ingredient list for this easy-to-make bread is short. With only a few ingredients, the bread is put together in hardly any time.
- Flour. All-purpose flour works best for this recipe.
- Sea salt. We use fine sea salt.
- Cinnamon.
- White sugar.
- Dry active yeast.
- Raisins.
- Water.

No Kneading
The best part about making this recipe is there is no kneading involved. All the ingredients are stirred together, then covered and left to rise for 12 to 18 hours.
The dough does need to be folded over on itself 3-4 times but that’s it!
Worth The Wait
If a quick loaf of bread is what you are looking for, this is not the recipe for you. The dough has to rise for at least 12 hours. Then needs to rest for 2 hours before baking.
We usually make this recipe late in the afternoon and allow it to rise until the next morning. Then it rests for 2 hours before baking.
The good news is that once it has risen and rested, it takes less than 30 minutes to bake.
Special Equipment
There is one thing that we recommend to make this bread and that is a Dutch oven.
The bread could be made without one and we have tested it, but the results are so much better when a Dutch oven is used.
Serving No Knead Raisin Bread
To serve this bread, all that needs to be done is slice it with a serrated bread knife and serve.
Toasted or not, this bread is perfect for breakfast, brunch, or as a snack.
Storing No Knead Cinnamon Raisin Bread
This bread will stay fresh for only about 24 hours. There are no preservatives in the bread so it will dry out quickly. So it is best served the day it is baked.
Wrap the bread tightly in plastic wrap after cooling to keep it fresh. It can also be stored in a Ziploc bag.

No Knead Cinnamon Raisin Bread
Equipment
- Dutch Oven
Ingredients
- 3½ cups all-purpose flour
- 1 Tbsp cinnamon
- 2 Tbsp white sugar
- ½ tsp salt
- ¼ tsp dry active yeast
- 1¾ cups warm water
- 1 cup raisins
Instructions
- Whisk together all dry ingredients.
- Add water and raisins. Stir until combined. Dough will be shaggy.
- Cover and let dough rise for 12 hours minimum and up to 18 hours.
- After rising, turn dough out onto a lightly floured surface.
- Fold dough over on itself 3-4 times.
- Cover loosely with plastic wrap and let rest for 2 hours.
- Preheat oven to 450℉ with the Dutch oven in the oven to heat as well.
- Turn dough into the heated Dutch oven and place lid on it.
- Baked in pre-heated oven for 15 minutes.
- Remove lid and bake additional 10 minutes.
- Remove from oven and turn the bread out onto a wire rack to cool before slicing.
