Smoked Sausage Stuffed Mushrooms

Mushrooms filled with sausage smoked and topped with cheese and bacon, Smoked Sausage Stuffed Mushrooms are an easy-to-make appetizer for a BBQ party. Quick and easy to put together, they are almost a fix-it-and-forget-it dish.

Not only is this mushroom recipe a great appetizer but it can also be served as a meal with salad or pasta on the side.

Ingredients For Smoked Sausage Stuffed Mushrooms

To make these stuffed mushrooms, you will need a total of eight ingredients.

  • Mushrooms. Larger mushrooms work best because you want to be able to fit the filling inside them. We like to use cremini mushrooms for this recipe.
  • Sausage. Our go-to is Italian sausage, sometimes mild, sometimes hot. Chorizo or any other kind of sausage can be used as well.
  • Red peppers.  Sweet peppers balance out the savoury and earthy flavours of the other ingredients.
  • Green onions. Added not only for flavour but a touch of colour as well.
  • Pizza sauce. Adding pizza sauce gives the stuffing flavour and helps to keep the filling moist.
  • Bacon. Crisp-cooked bacon mixed with cheddar is used for the topping on the mushrooms when they are in their final minutes.
  • Cheddar. An old or sharp cheddar is what we use to mix with the bacon for the topping.
  • Hickory Sticks. A Canadian snack that adds crunch and a little flavour to the top of the stuffed mushrooms. Potato Sticks can be substituted if you can’t find Hickory Sticks but the flavour will be slightly different. Crushed BBQ chips are another alternative to the Hickory Sticks.

What Kind Of Smoke Is Used For These Mushrooms?

When it comes to this recipe, we make it on our Pit Boss pellet smoker. It is usually already filled with a competition blend of pellets or applewood. Both of these woods are great for smoking vegetables.

Tips For Making Stuffed Mushrooms

Making this stuffed mushroom recipe is easy and these tips help.

  • Use a spoon to gently scrape out the gills in the mushrooms so you can fit more filling inside.
  • Place the mushrooms on a cookie sheet or baking pan and place the pan in the smoker. This makes it easier to put the mushrooms in the smoker and remove them. It is also a good way to catch any of the toppings that may melt off the mushrooms.
  • To crush the Hickory Sticks, use a mortar and pestle to break them but leave some larger pieces for crunch.
  • Sausage meat can be purchased without casings to make this recipe to avoid having to remove the casings which saves a little time.
  • Use a thermometer to check the internal temperature of the sausage to make sure it is cooked.

Serving Smoked Sausage Stuffed Mushrooms

Sausage Stuffed Mushrooms are great on their own or as an appetizer. We like to serve these as appetizers when hosting a backyard BBQ with additional pizza sauce to dip.

For a meal, these mushrooms can be served with a salad on the side.

Sometimes we add these stuffed mushrooms on top of a bowl of spaghetti in place of meatballs.

Storing Leftover Stuffed Mushrooms

Any leftover mushrooms should be refrigerated in an airtight container. They will keep this way for up to 2 days.

To reheat the mushrooms, they can be heated in a microwave, but we have found the best way to reheat these mushrooms is in an air fryer for about 5 minutes.

Smoked Sausage Stuffed Mushrooms

Ingredients
  

  • 15 mushrooms
  • 600 grams sausage meat or sausages with the casings removed
  • ½ cup diced red pepper
  • 2 green onions, finely chopped
  • ¼ cup pizza sauce
  • ¾ cup shredded cheddar
  • 4 slices crisp cooked bacon, chopped
  • ¼ cup crushed Hickory Sticks

Instructions
 

  • Preheat pellet smoker to 250℉. Use your favourite pellets for smoke.
  • Remove stems from mushrooms and gently remove gills from inside by scraping them with a spoon.
  • In a bowl, mix sausage with peppers, green onions and pizza sauce.
  • Fill mushrooms with sausage mixture and place on a baking pan.
  • Place pan on smoker and smoke for 1 hour and 45 minutes or until the mushrooms are tender and the sausage is cooked (165℉)
  • Mix shredded cheese and bacon together and top mushrooms with the mixture.
  • Sprinkle the crushed hickory sticks on top.
  • Place back in the smoker until cheese is melted, about 10-15 minutes.
  • Serve hot with additional pizza sauce for dipping if desired.
