Smoked Sausage Stuffed Mushrooms
Mushrooms filled with sausage and peppers then smoked, topped with cheese and bacon.

- 15 mushrooms
- 600 grams sausage meat or sausages with the casings removed
- ½ cup diced red pepper
- 2 green onions, finely chopped
- ¼ cup pizza sauce
- ¾ cup shredded cheddar
- 4 slices crisp cooked bacon, chopped
- ¼ cup crushed Hickory Sticks
Preheat pellet smoker to 250℉. Use your favourite pellets for smoke.
Remove stems from mushrooms and gently remove gills from inside by scraping them with a spoon.
In a bowl, mix sausage with peppers, green onions and pizza sauce.
Fill mushrooms with sausage mixture and place on a baking pan.
Place pan on smoker and smoke for 1 hour and 45 minutes or until the mushrooms are tender and the sausage is cooked (165℉)
Mix shredded cheese and bacon together and top mushrooms with the mixture.
Sprinkle the crushed hickory sticks on top.
Place back in the smoker until cheese is melted, about 10-15 minutes.
Serve hot with additional pizza sauce for dipping if desired.
