What Kind Of Chocolate is Used?

To make these cookies, we use dark chocolate baking squares. Our favourite is Baker’s dark chocolate.

We have also tested this recipe using dark chocolate chips and had great results.

Is There A Special Salt To Use For Cookies?

Most cookie recipes that are salted on top use flaky salt. And that type of salt can be used.

We use coarse sea salt. We like this type of salt because it packs a lot more flavour with only a small sprinkle. Our favourite is Aurora Coarse Sea Salt.

Tips For Making This Cookie Recipe

When baking these cookies, it is important not to overbake them. They should still be wet and soft in the centre. This will not only help the salt adhere to the tops of the cookies, but also make sure the cookies remain soft after cooling. The cookies will continue to bake while cooling on the pan for 2 minutes before transferring to a cooling rack.

To make the cookies even in size, we like to use a cookie scoop. For this recipe, a small-sized scoop is used.

Storing Salted Dark Chocolate Cookies

Once cooled, these cookies will stay fresh in an air-tight container for up to three days.

They can also be frozen for up to three months. Thaw at room temperature before serving.

Salted Dark Chocolate Cookies

Ingredients
  

  • ¾ cup all-purpose flour
  • ¾ cup white sugar
  • 3 Tbsp unsweetened cocoa powder
  • ¾ tsp baking soda
  • 8 ounces dark chocolate, chopped
  • ¼ cup butter
  • 2 eggs
  • 1 tsp vanilla extract
  • Coarse sea salt

Instructions
 

  • Preheat oven to 350℉ and line two baking sheets with parchment or a silicone mat.
  • In a large bowl, whisk together flour, sugar, cocoa powder, and baking soda.
  • In a small pot over low heat, melt the dark chocolate and butter together, stirring to combine.
  • Pour melted chocolate into the flour mixture, stirring. Mixture will be thick.
  • Stir in the eggs and vanilla until well combined.
  • Drop cookie dough by equal spoonfuls onto prepared pans, spacing about 2 inches apart.
  • Bake 10-11 minutes, don't overbake. Cookies will be soft and wet in the centre but the edges will be baked.
  • Sprinkle immediately with coarse sea salt.
  • Let cool for 2 minutes on the pans before transferring to a cooling rack to finish cooling.
