Tips For Making Shortbread Cookies
When making these cookies, the butter should be at room temperature. It needs to be soft so that it blends easily with the flour and powdered sugar.
Whisking the flour and powdered sugar together before adding them to the butter will ensure that the ingredients blend evenly.
Don’t overbake the cookies. They will remain white on top and will continue to bake as they cool on the cookie pan.
Storing Chocolate Chip Shortbreads
The best way to store shortbread cookies is in an airtight container. Place parchment paper between layers of cookies. Stored at room temperature, the cookies will stay fresh for up to five days.
The cookies can also be frozen for up to three months. Thaw them at room temperature before serving.

Chocolate Chip Shortbreads
Ingredients
- 1 cup butter, softened
- 1½ cups all-purpose flour
- ½ cup powdered sugar
- ¾ cup chocolate chips
Instructions
- Beat butter, flour and sugar together in a stand mixer for 2 minutes on low.
- Turn the mixer to medium and continue beating for 4-5 minutes.
- Preheat oven to 350℉ and line a baking sheet with parchment paper.
- Roll cookie dough into 1-inch balls and place on prepared pan about 2 inches apart.
- Flatten cookies slightly with the bottom of a glass.
- Bake in preheated oven for 10-12 minutes, or until edges are golden. Tops will still be white.
- Allow to cool on the pan for 5 minutes before transferring to a cooling rack to finish cooling.
- Store in an air-tight container for up to 5 days.
