Then, as the waffles are cooked, we place them on the cooling racks in the oven to keep them warm until we are ready to serve them.
How To Keep Waffles From Getting Soggy
Waffles will become soggy on the bottom when they are placed on a plate or stacked together. Steam will form under the waffles and cause them to be soggy.
To keep them crispy, place them on a cooling rack so there is airflow under them. And don’t stack them on top of each other while they are still warm.

Yes, cinnamon waffles can be frozen. The best way to do this is by placing the waffles in a single layer on a large cookie sheet and placing the cookie sheet in the freezer until the waffles are frozen.
