This simple recipe is made with a total of six ingredients.
- White onions. Although we use white onions, yellow or Spanish onions can also be used in this recipe.
- Butter. We use salted butter to make this marmalade.
- Garlic.
- Balsamic vinegar. There are different types of balsamic vinegar and we have tried different ones. They can all be used in this recipe but we have found that 1 leaf balsamic yielded the best flavour.
- Sea salt.
- Pepper.

How To Make Caramelized Onion Marmalade
Making onion marmalade is easy and can be done in one pot. Our favourite pot to cook the marmalade is a cast iron Dutch oven because it holds the heat steady.
We like to make this recipe on the outdoor griddle because the onions can be spread out and cooked quicker than in a pot. We have a 22-inch Blackstone griddle and can cook all the onions at once in a single layer.
The onions do take time to caramelize and soften. Don’t rush the process, allow the onions to cook slowly so they break down and soften. This will bring out the sweetness of the onions.
What Is The Difference between Onion Marmalade and Onion Jam?
Onion jam and marmalade are similar and can be used in the same ways. The main difference is that jam is usually sweeter and has added sugar.
Onion marmalade does not have added sugar in the recipe. The sweetness comes from the onions.
How To Serve Caramelized Onion Marmalade
Serve this caramelized onion marmalade warm on crackers or toast for a quick snack.
This marmalade is a great addition to a charcuterie board. The sweetness of the onions balances the flavours of strong cheeses and salty meats. Bacon Jam also goes great on a charcuterie board.
Use these onions as a topping for burgers and hot dogs. Warm the onions in a pot on the BBQ or griddle as burgers or hot dogs cook to have a topping. They are also great on sausages.

Storing Onion Marmalade
Although this seems like a large recipe from the ingredient list, once the onions cook down they will fit in a large mason jar, usually, we can fit the entire recipe in an 800ml mason jar.
Store the marmalade in the fridge for up to one month. Smaller jars can be used as well and canned for later use.
The recipe can also be frozen in jars meant for freezing jams.

Caramelized Onion Marmalade
Equipment
- Large heavy bottomed pot
Ingredients
- 5 pounds onions, white or yellow
- ½ cup butter, more may be needed, see notes
- 1 head of garlic. minced
- 2 tsp sea salt
- 1 tsp pepper
- ½ cup balsamic vinegar
Instructions
- Peel and slice onion, about ¼-inch thick.
- Heat a heavy-bottomed pot over medium heat.
- Melt butter.
- Add sliced onions, garlic, salt and pepper.
- Cook, stirring occasionally until onions are soft and caramelized, about 15 minutes. Add more butter if needed.
- Add balsamic vinegar and cook, stirring for an additional 5 minutes to allow the vinegar to cook down slightly.
- Remove from heat and allow to cool before storing in a covered container or jar in the fridge for up to one month.
