Caramelized Onion Marmalade
Sweet and buttery, this onion marmalade is not only easy to make, it is bursting with flavour.

Ingredients

onions, white or yellow

cup
butter, more may be needed, see notes

head of garlic. minced

sea salt

balsamic vinegar
Instructions
Peel and slice onion, about ¼-inch thick.
Heat a heavy-bottomed pot over medium heat.
Melt butter.
Add sliced onions, garlic, salt and pepper.
Cook, stirring occasionally until onions are soft and caramelized, about 15 minutes. Add more butter if needed.
Add balsamic vinegar and cook, stirring for an additional 5 minutes to allow the vinegar to cook down slightly.
Remove from heat and allow to cool before storing in a covered container or jar in the fridge for up to one month.
Notes
Additional butter may be needed if the onions soak up all the butter. Add butter, a tablespoon at a time, if needed.
