Caramelized Onion Marmalade

Sweet and buttery, this onion marmalade is not only easy to make, it is bursting with flavour.

Equipment

  • Large heavy bottomed pot

Ingredients

  • 5 pounds onions, white or yellow
  • ½ cup butter, more may be needed, see notes
  • 1 head of garlic. minced
  • 2 tsp sea salt
  • 1 tsp pepper
  • ½ cup balsamic vinegar

Instructions

  • Peel and slice onion, about ¼-inch thick.
  • Heat a heavy-bottomed pot over medium heat.
  • Melt butter.
  • Add sliced onions, garlic, salt and pepper.
  • Cook, stirring occasionally until onions are soft and caramelized, about 15 minutes. Add more butter if needed.
  • Add balsamic vinegar and cook, stirring for an additional 5 minutes to allow the vinegar to cook down slightly.
  • Remove from heat and allow to cool before storing in a covered container or jar in the fridge for up to one month.

Notes

Additional butter may be needed if the onions soak up all the butter. Add butter, a tablespoon at a time, if needed.
