Spicy Sambal Pork Noodles

A spicy noodle dish that makes the perfect comfort food.

Ingredients

  • 2 pounds pork shoulder, cubed
  • 3 Tbsp minced garlic
  • 1 Tbsp grated ginger
  • cup brown sugar
  • ¼ cup Sambel Oelek
  • ¾ cup soy sauce
  • 2 limes, zest and juice, divided
  • 1 package Ramen noodles
  • 2 green onions, chopped

Instructions

  • Place the pork shoulder in the slow cooker.
  • In a medium sized bowl, combine the garlic, ginger, brown sugar, sambal oelek, soy sauce and the zest of two limes and juice from one lime.
  • Pour mixture over the pork.
  • Turn slow cooker on low and cook for 8 hours on low or 4 hours on high, or until the pork is cooked through and can be easily pulled apart.
  • Remove pork from slow cooker and pull apart or chop into small pieces, reserving the liquid in the slow cooker.
  • Cook ramen according to package directions.
  • Drain ramen and mix with pork and the liquid from the pork.
  • Plate the ramen and pork.
  • Top with green onions and squeeze of lime over top.
