Mediterranean Bow Tie Salad

Mediterranean Bow Tie Salad is made with pasta and fresh vegetables and makes a great side dish for your next BBQ.

Ingredients

  • 1 pound bow tie pasta (454 g), cooked and cooled to room temperature
  • 2 medium sized tomatoes, diced
  • 1 English cucumber, diced
  • ½ cup sliced black olives
  • 1 Tbsp oregano
  • 1 lemon, zest and juice
  • 200 grams feta cheese, crumbled
  • 400 ml Greek Salad dressing

Instructions

  • In a large bowl, mix together the cooked pasta, tomatoes, cucumbers and olives.
  • Add the oregano, lemon juice and zest, crumbled feta and salad dressing.
  • Stir gently to combine all ingredients.
  • Cover and refrigerate until cold, about 30 minutes to one hour.
  • Serve cold.

Notes

For best results, cook the pasta al dente and rinse with cool water after draining. Let the pasta come to room temperature before making the salad. Using hot pasta may cook the vegetables and it will absorb the dressing too much.
