BBQ Pineapple Chicken is sweet, and tangy and makes a perfect weeknight supper. This is a simple recipe that is adapted from an Aloha Chicken recipe.

This chicken is grilled on the BBQ and can be ready in 30-40 minutes if you prepare the marinade the night before or even in the morning. Letting the chicken marinade all day, allows the chicken to soak up more of the flavours of the marinade.

Ingredients For BBQ Pineapple Chicken

To make this recipe, the following ingredients are needed:

  • Chicken breasts. Our choice is boneless, skinless chicken breasts, but bone-in chicken can also be used.
  • Pineapple juice.
  • Ketchup.
  • Soy Sauce.
  • Brown sugar.
  • Hot sauce.
  • Minced garlic.
  • Grated ginger.
  • Salt and Pepper.

Can Chicken Thighs Be Used In Place Of Breasts?

Yes, we have made this recipe using boneless, skinless chicken thighs and the results were just as good.

Using thighs will change the amount of time it takes to grill the chicken because thighs are typically thinner than breasts.

Equipment for Making This Recipe

To make this recipe we use only a few tools that make cooking this chicken easier. These are not necessary but they help.

The one item that we never skip when cooking chicken is a meat thermometer. It is important to make sure the chicken is fully cooked before serving.

We also like to use a basting brush with a long handle to avoid having our hands over the hot grill for long. We prefer silicone brushes because we find them easier to clean and the bristles don’t fall out into food. They also last longer.

Serving Ideas

BBQ Pineapple Chicken can be served in so many ways.

  • Over rice. Add some grilled vegetables to complete the meal.
  • On top of a salad. A creamy dressing such as Ranch is a good option to pair with this chicken.
  • Sliced in a wrap with vegetables and shredded cheese.
  • On toasted buns with lettuce and tomatoes or topped with coleslaw. We like to use Apple Coleslaw, instead of lettuce and tomato.

Can This Chicken Recipe Be Made In The Oven?

Yes, the chicken can be baked in the oven instead of on a BBQ. To do this place the chicken on a baking pan with a wire rack in it and bake at 350ºF for 30-35 minutes, or until the chicken reaches 165ºF internally.

Ingredients
  

Marinade

  • 1 cup unsweetened pineapple juice
  • ¾ cup ketchup
  • ½ cup soy sauce
  • ½ cup brown sugar, lightly packed
  • 1 Tbsp freshly grated ginger
  • 2 garlic cloves, minced
  • 2 Tbsp hot sauce

Chicken and seasonings

  • 6 chicken breasts
  • 1 tsp sea salt
  • 1 tsp black pepper

Instructions
 

  • Place all marinade ingredients in a large bowl and whisk together.
  • Reserve ¼ cup of marinade for basting.
  • Add chicken breasts to the marinade and turn to coat.
  • Let chicken marinade at least 2 hours to overnight.
  • Heat barbecue to medium.
  • Add chicken breasts to grill, season it with salt and pepper and close grill lid.
  • Cook for 7-10 minutes before turning and cooking additional 7-10 minutes.
  • When chicken reaches 155°F, brush with BBQ sauce, turn and brush sauce on other side.
  • Close lid and allow to cook to internal temperature of 165°F.
  • Remove from grill and allow to rest 5 minutes before serving.

    I love BBQ chicken. Pineapple is one of my favorite fruit. love the play on the pineapple flavor using pineapple juice and the hot sauce for the sweet and spicy taste. Great recipe.
