Preheat smoker to 250℉. Once preheated, add wood chips or pellets.
Cut pumpkins in quarters.
Remove seeds and strings from pumpkin.
Place pumpkin quarters in smoker, skin side down.
Close smoker and allow to smoke for 1 hour.
Continue cooking for additional hour or until pumpkin is softened and can be easily pierced with a fork.
Remove from smoker and allow to cool until cool enough to handle.
Peel skin from pumpkins
Add pumpkin to blender and puree until smooth. Add a tablespoon of water if pumpkin won't break down.
Pour pumpkin into clean mason jars with sealing lids.
Refrigerate for up to two weeks.
