Peach Puff Pastry Tarts
Sweet peach tarts that are easy to make. Can be made in the oven or on the BBQ.

- 1 sheet of puff pastry, thawed (200 grams)
- 1 egg yolk
- 3 large fresh peaches, pitted and sliced thin
- 2-3 Tbsp maple syrup
- 2 Tbsp powdered sugar, for dusting, optional
Preheat oven to 375℉ and line a cookie sheet with parchment paper.
Roll out pastry dough to make a 10 inch square.
Cut the pastry sheet into 6 equal rectangles and place on prepared pan.
Pierce the centres of the pastry with a fork, leaving half an inch around the edge.
Whisk the egg yolk with 1 tablespoon of water and brush the edges of the pastry with the yolk.
Fan the peach slices in the centre of the pastry, using half a peach in each pastry.
Bake for 20-25 minutes.
Remove from oven and drizzle with maple syrup and sprinkle powdered sugar over top if using.
Serve.
