Maple Bourbon Carrots
Maple Bourbon Carrots are a sweet and savoury side dish. These carrots can be cooked on the BBQ or in the oven making them a great side dish for any meal.

- 1½ pounds fresh carrots, peeled
- 4 Tbsp butter
- 2 Tbsp maple syrup
- 2 Tbsp Bourbon
- 1 Tbsp brown sugar
- ½ tsp sea salt
- 4-5 sprigs of fresh thyme or rosemary
Preheat oven to 375℉
Cut the carrots into 1-inch pieces on the diagonal.
Place cut carrots in an oven-proof dish.
Separate the butter into 4 pieces and place in different places on top of the carrots.
Mix the maple syrup, Bourbon, and brown sugar together and pour over the carrots.
Place the sprigs of thyme on top of the carrots.
Tightly cover the dish with foil and place in the oven.
Cook covered for 15 minutes.
Remove the foil and stir.
Cook uncovered for an additional 15 minutes or until carrots are tender.
Serve immediately.
